What would you do with refried beans?

Yes the vegetarian kind. We used to mix them with black olives, onions, garlic, and soy mozzarella and use it as a dip for chips and consider it a meal. Got any other simple ideals?

Update:

Most re-fried beans have lard in them. If you don't buy vegetarian that's your problem not mine.

I actually just made a vegan quesadilla with refried beans. I used refried beans, onions, tomatoes, vegan cheese, cumin, and cayenne pepper. I just layer it between two tortillas and gave it a little heat in a pan and served with salsa. I also love bean burritos and make a dip with salsa, refried beans, and vegan sour cream. I have also found many recipes online using refried beans so if you have not already maybe you could look around.

I like to serve refried beans on a plate with baked onions and baked tomatoes. Here's how I do it:

Baked onions: Cut up the onions into whatever shape you want (I just cut them the way that fastest for me) and put them into a baking dish with coconut oil. (You could use a different oil, but I recommend coconut oil.) In another oven dish, put peeled (unless they're organic--more on how to quickly peel tomatoes in a moment), very thin half-slices of tomato with coconut oil. (Peel before slicing.) Start both dishes in a fairly high oven; stir every so often and check them after a while, turning oven down to medium if necessary.

The tomatoes come out almost like dried tomatoes, just not so dry.

Serve them with the heated refried bean in three little mounds on a dish. I usually serve a fresh mixed salad with this meal.

There are lots of good uses for leftover baked tomatoes and onions, too, such as mini-pizzas.

How to peel tomatoes (and why):

First, I only peel tomatoes if they are not organic. (Non-organic tomatoes have lots of toxins on the peel.) I put some water (enough to almost cover the tomatoes) in a pot, covered, and bring it to a rolling boil. The tomatoes are not in the pot while it's coming to a boil.

When it's boiling, I lower the tomatoes into the water, one at a time, and literally watch the clock, timing 45 seconds. Then I take them out quickly with a spoon and run them under cold water. The peel comes off very easily then!

Hope you try (and enjoy!) this simple, yummy combination of refried beans, baked onions, and baked tomatoes.

I often add whole kidney beans, chilli, any other vegies that I have on hand (broccoli, carrots, corn, small diced potatoes, steamed pumpkin...), chopped tomatoes and tomato paste to the refried beans. Then I serve with steamed rice and warm tortillas. This is actually one of my family's staple meals - everyone loves it.

Put them in a fajita, burrito, or taco; or eat them with a side of rice and a salad; mix with some hot peppers and use with tortilla chips. Make a wrap with them with veggies; use them on a cheeseless pizza.

The vegetarian kind? All refried beans are OK for vegetarians to eat. Eat them plain.

Uh, no. Many manufacturers of canned refried beans sold in stores do not put lard in them.
