It depends upon where you are and what else is included in your contract. I live in the Northwest and make less than that and we do just fine. (My husband makes the same amount that I do so some people would say that we have a double salary, but we also have two kids.) Our single colleagues make the same amount of money as we do (less than 4000 yuan per month) and they have no problems with living on it. Our contract hours are 18/week, but we typically work 14 - 16. Contrary to what another answer said, we have NEVER been asked to work beyond our schedule and we have NEVER been taken advantage of. This is our sixth year in China. We pay for our own internet (20 yuan per month) and for our own utilities, electricity and gas (about 175 yuan per month for both.)
Our housing is provided with basic cooking tools (I supplemented a lot!) and bedding is provided. We get paid for 12 months a year and receive a travel allowance during Spring Festival that is about 2/3s of our salary.
My husband and I receive round trip transportation to/from the US. We have to buy our kids' tickets. However, our school always buys them for us in order to make sure all four of us are on the same plane. We pay them back for the kids tickets.
Our school also pays a 4 yuan per month accident insurance fee for us. They filed all the paperwork for us in November when my husband sustained a head injury while playing basketball with colleagues and students.
While it is true that the cost of food is rising, you should still have no problems living on 4000 yuan per month, provided you don't have to pay rent.
Contrary to what others say, teaching 12 - 20 hours in a UNIVERSITY setting is considered to be a full time job. Those hour account for only the face time involved . . . they don't include other things that a university teacher does . . . preparation, office hours and evaluation. It is most definitely a full time job. This would be true whether you teach in China or in the United States.
If you are coming to make a lot of money, then obviously, this isn't a great salary. If you are coming to be a part of change and to gain valuable educational experience, then the salary is priceless.
Good luck!

No matter what your contract says, you WILL be expected to work considerably more than 20 hours per week. You should get 7000 RMB plus apartment and health ins as well. You are going to China and you will be taken advantage of.

I'm sorry, but $8.75 an hour is not enough. Are you pay her taxes? Remember two children is a lot. A two year old is a handful, a four month old needs a lot of attention. A full time nanny will usually get paid $10 an hour. Please reconsider, remember your leaving her with the most precious possessions you have. She going to do her best with your children. She worth every penny you spend.

What about food and accommodations?
If they include free housing and food, it's fine.
If they include only housing, it's borderline.
If they include only meal, it may not be enough for rent.
If they don't include anything else, it's not good.
The above mentioned offer for 20hrs does seem like a part-time job. You might want to reconsider the options and benefits included.

No you should get in the 5000 to 6000 and an apt and in many cases your food. I was teaching in China three years ago and got 5500 and free apt and they feed me as well,
