Kelly green potato salad for St. Patrick's, cute, or icky?

I thought it would be cute to bring some really bright green potato salad to the party in New Orleans for the St. Patrick's parade, but I wonder if it would put more people off than it would amuse. If any one who reads this would chime in, I would most appreciate it. If it matters, what they are having already is craw fish and beer, (not green! eek!) and I am bringing cupcakes too. Oh, also, I have the super bright baker's food color in Kelly green, so it would be pretty much technicolor, not just sort of green. Thanks every body!

    Even though I agree that green makes people think of moldy food, I personally think St. Patrick's day is an exception. Green beer and green Shamrock shakes are the norm around this time of year. At our office party we have a tradition of ALL green lunch on St. Patrick's Day. Last year we had mountain dew punch, wilted spinach salad, split pea soup, green eggs and ham(somebody got their themes crossed), and wraps made with green (maybe spinach flavored?) tortillas dyed cream cheese and turkey. It's always lots of fun and a bit of a challenge, but thanks to your question this year I'm making green potato salad, I think its very cute.

    I'd limit the food colour to the cupcakes.

    Perhaps put celery or green pepper in the potato salad.

    The potatoes will not be green anyway, just the mayo.

    People just aren't attracted to green food im afraid, and you may not have the chance to explain to everyone your creativity.

    Perhaps make potato salad with lots of peas and lettuce - anything to make it natural green, rather than artificial green...

    Or put mini flags on cocktail sticks into the food to express the Paddy's day theme.

    Why not just dye a small amount of the potato salad & fashion a shamrock shape to top off the `normal` salad , could look funky !

    Green is going to subconsciously make people think mold. If you want to serve something green, try a beverage or dessert that you can color green instead.

    instead of that, why not add a lot of green veggies in chunky pieces? Like green pepper, celery, some parsley and maybe some avocado and cucumber..

    Using food coloring might be tacky but i have a few recipes where I use either a cilantro sauce or parsley sauce that is very attractive and delicious.
