No, you don't have to plug the AV cable in. If the PS3 doesn't show up on the TV (it should when being hooked up for the first time, no matter what cable you use), then you will need to do a Video Reset.
How to do a Video Reset: With the PS3 in stand by mode (red light on front of the PS3), hold the power button down until you hear two beeps (about 5 seconds). The PS3 will turn on and automatically reset giving you the best settings for the type of TV and cable being used.
Always do a Video Reset when you change TVs and/or cables to get the best settings for the PS3, and/or when you can't see an image on the screen.
Sometimes the audio will work in everything but games. If this happens, then do a system restore, and the audio will start working during games: XMB > Settings > System Settings > Restore Default Settings (this does not delete anything on the PS3, just resets it).

yes. you have to connect the composite cables to your tv, and then you need to go to the setup and change the settings to hdmi. plug in the hdmi cable and then it will ask if you want to keep the settings. if you can see it, then you can choose yes. if you can't see it, then it'll convert back to composite.
