Suggestions for a vegetarian diet?

I have been vegetarian for 3 years and after taking college health classes and doing research about certain foods, I am afraid of most of the vegetarian bases. Like tofu because I have heard about unprocessed soy being a cause of thyroid disease. And sietan because it is wheat gluten and gluten is supposedly bad for humans in large amounts. I was told that none of this was ever solidly proven, but the theory has to have some basis. Are there any other economical and healthy vegetarian/vegan alternatives?

    I am not vegeterian, but here are some suggestions.

    Maybe a sandwich with all greens and vegetables in it. Or maybe a clear soup of some sort.

    I am sorry that I have so little suggestions.. haha.. I am hard at vegetarian stuff.

    Rice, nuts, oats, legumes. I am not fully comprehending what you are looking for. A food to replace meat? A snack?

    By the way, soy does not cause any diseases. Those are all myths. Soy, along with any other bean, is among the healthiest foods (and vegetarian bases) one can consume.

    Uh...well I mean, you don't have to eat faux meat, you know.

    I've never had faux animal products in five years of veganism.
