Real whipped cream IS heavy cream and that had air whipped into it to make it frothy. But canned whipped cream often is NOT real cream. And prepared whipping cream usually has some sugar and often other stuff in it. If I did not have heavy cream, I would use milk. I might use milk anyhow ... I find some recipes that call for heavy cream are just that ... too heavy (too high a fat content).

I wouldn't think so...heavy whipping cream is used to make whipped cream, so it is thicker and more fluid, where whipped cream is light and fluffy. Also, it would be difficult to get measurements the same - your recipe calls for a pint of heavy whipping cream. A pint of whipped cream would not be the same amount, due to the fact that there's so much air in whipped cream.

That being said, I've never made caramels, so if you were able to get the measurements right, it may turn out just fine.
