I make this at least once a week with the couple of bananas I always have left over - its only 5 ingredients - preheat oven to 350

    1 cup mashed bananas (2 to 3)

    1 cup miracle whip

    3/4 cup of sugar

    2 cups of flour

    2 tsp baking soda

combine wet ingredients and then dry ingredients in a separate bowl

add dry to the wet - will be a thick consistency.

pour into a greased loaf pan and bake for about an hour

    Easy Banana Bread Recipe

Prep time: 5 minutes Cook time: 1 hour

    Ingredients

3 or 4 ripe bananas, smashed

    1/3 cup melted butter

1 cup sugar (can easily reduce to 3/4 cup)

    1 egg, beaten

    1 teaspoon vanilla

    1 teaspoon baking soda

    Pinch of salt

    1 1/2 cups of all-purpose flour

    Method

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

    Yield: Makes one loaf.

    Nonna's banana bread

My Nonna's recipe. You can omit the nuts if you wish, I do

    Ingredients

    1 2/3 cups all-purpose flour

    1 teaspoon baking soda

    1/4 teaspoon ground cinnamon

    1/2 teaspoon salt

1 cup plus 2 tablespoons sugar

    2 eggs

    1/2 cup oil

3 1/2 bananas, very ripe, mashed

2 tablespoons creme fraiche or sour cream

    1 teaspoon vanilla extract

2/3 cup pecans, toasted and chopped

    Method

Set oven to 350 degrees F. Line the bottom of a loaf pan with parchment paper.

Sift together the flour, baking soda, cinnamon and salt. Beat sugar and eggs with a whisk until light and fluffy, about 10 minutes. Drizzle in oil. Add mashed bananas, creme fraiche, and vanilla. Fold in dry ingredients and nuts. Pour into a lined loaf pan and bake for about 45 minutes to 1 hour.
