First of all as I recall it, in the Mankind vs Undertaker match, the dives that Mankind took happened before the match officially started. The match in it's self wasn't all that great, but Mankind did one hell of a job to get up and do the match considering the injuries that he just received.
The best would have to be the Mick Foley vs Triple H match. I forget at which event that it took place at, but it was Foley's retirement match (one of them anyway). It had a flaming barbed wire 4x2 and a dive through the cage.
Also the Al Snow vs Big Boss Man Steel Cage in side of The Hell In The Cell, while not a proper HITC match it deserves an honorable mention, mainly because of the vicious gard dogs that were meant to rip them apart, but were more concerned with pooing and sniffing each others rear ends.

Definitely Edge vs The Undertaker inside Hell in a Cell at Summerslam 2008. Edge and Undertaker had an intense rivalry going on at that time, one of the best rivalries of this era. And their Hell in a Cell match at Summerslam did not disappoint. It was simply epic (not Shawn Michaels vs The Undertaker epic, far from it, but epic nonetheless).

Gotta agree with suckafat the match with HBK and Taker was so memorable, the first time we got to see Kane and we were all like who the hell is this guy, next thing you know he tombstones taker then hbk goes for the pin 1,2,3. and a close second would be Taker and Mankind.

Undertaker vs Brock Lesnar at No Mercy 2002. I know it wasn't one of the best but it was the first WWE main event I ever saw and I was amazed at the time.
