No bake cookies without oatmeal? or any other super chewy cookie?
I just got my wisdom teeth out, and thus cannot eat anything that I truly have to chew. Is there a recipe for no bake cookies without oatmeal or coconut? Has anyone made them before with out the oatmeal and knows what happens? AND is there any other kind of cookie that you think I could eat? I'm craving sweets if you can't tell. lol

Not a no-bake recipe, but a really easy one
3 ingredient peanut butter
Ingredients
* 1 cup peanut butter
* 1 cup white sugar
* 1 egg
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
2. Combine the peanut butter, white sugar and egg. Mix until smooth.
3. Drop spoonfuls of dough onto the prepared baking sheet. Bake at 350 degrees F (175 degrees C) for 6 to 8 minutes. Do not overbake! These cookies are best when they are still soft and just barely brown on the bottoms.

I have a recipe for super soft and chewy cookie but you have to bake then. They are really simple and only take 8-10 min. to cook. I'll put up the recipe and you could try it if you want.
Mix:
2/3 cup shortening (such as crisco)
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon salt
Use an electric mixer to mix the ingredient's above until well mixed and soft
Next add 1 1/2 cup flour and desired amount of chocolate chips
Mix well and preheat oven to 375 degrees. Put about small hand full of cookie dough on cookie sheet with tinfoil on it and is sprayed with non-stick spray. cook from 8 to 10 min. and let cool for 10 min. and enjoy. Hope I helped and you feel better soon.

I thought you weren't looking for a chewy cookie so I'm confused about the last part "Or any other super chewy cookie"??
Maybe you meant super soft? If you did, yes I have some recipes for you.
First of all, I suppose I'd recommend cake instead of cookies. All the sweetness but less (much less) toughness. Soft and super tender.
The oats in no-bake cookies are important... they absorb the moisture and hold it all together. Otherwise you'd have something akin to loose fudge.
Here is a recipe for a very simple, but delicious sugar cookie. It is very soft. Follow the recipe but just don't roll the balls in sugar. Instead just press them lightly. The sugar would add undesired crunchiness that you wouldn't want given your recent dentist visit!

The recipe under the lid of the Quaker Oatmeal canister is the best ever. The trick is to take the cookies out of the oven before they are done. They will continue to cook after taken from the oven. They will be perfect after they have cooled. I like to take the hard, store-bought cookies and put them in a ziploc or canister and add a piece a bread. Your hard cookies will be soft overnight! These tricks work with any kind of cookie.

Original Recipe Yield 2 dozen
Ingredients
2 cups white sugar
1/2 cup milk
1/4 cup butter
2 tablespoons unsweetened cocoa powder
4 cups corn flakes
1/2 cup peanut butter
1 teaspoon vanilla extract
1 cup chopped walnuts (optional)
Directions
1.Combine sugar, milk, butter and cocoa in a saucepan and bring to a boil, cooking 1 minute.
2.Remove from heat and add remaining ingredients. Stir and mix well.
3.Drop by teaspoons onto wax paper, letting stand 30 minutes or when dry and cool. Store in well-sealed container.
