does extracts, seasonings and candy/icing decoration ever go bad?

The expiration date on the packages and bottles has past, but I tasted the candy stars and they taste fine. I also have some food coloring, can it go bad? How do they go bad? Does the extract become less strong, or can it make someone sick to ingest any of this?

    Food coloring:

    It will be fine for about 5 years or so after the given expiration date. The given expiration date on the package is just concerning the actual color quality, not any health concerns.

    According to McCormick:

    Ground spices last 2-3 years.

    Whole spices last 3-4 years

    Seasoning blends 1-2 years

    Herbs 1-3 years

    Extracts 4 years, except for pure vanilla, which last indefinitely

    Here are other hints from McCormick:

    Check the color of your spices. Make sure they're still vibrant. If their color has faded, chances are so has their flavor.

    Rub or crush the herb or spice in your hand. If its aroma is weak and flavor is not apparent, then it's time to replace it.

    Store spices in a tightly-capped container and keep them away from heat, moisture and direct sunlight. Replace their lids right after use. Avoid storing spices and herbs over the stove, near a dishwasher or sink, or near a window.

    Members of the red pepper family, including paprika and chili powder, will retain their color and remain fresher longer when stored in the refrigerator.

    If it's a food, drink or something edible it has to have an expiration date on it. Just because the date has came and went doesn't mean it's automatically bad. You did the right thing in tasting it and it was okay, if it does go bad it will have an off odor and will taste funny. Other than that you should be fine.

    They DO expire but it takes a long time. It is just like water, it doesn't expire but it does go bad when you ingest it. so if the expiration date was a long time ago, i suggest that you dump it. i mean those things are just a few dollars. and if they already expired, that must mean you don't really use them.
