Does anyone have a good, moist coconut cake recipe?
I want to make one for Easter and I want to make a pineapple, orange filling for it with a light, creamy frosting covered with coconut. If you have a fairly easy recipe would you like to share it? I'd be forever grateful! Happy Easter!

You can use a regular white cake recipe, and add a small container of sour cream to it. This will cut the sweetness of the cake, since you are using sweet fillings and a fluffy frosting.
Pineapple and orange jam make good fillings. I use the gourmet stuff, since it tastes so much better than the regular sugary stuff.
For a light frosting, you can use Whipped Cream, Dreamwhip, or marshmallow fluff in the jar.
