When they say rib eye, what's the eye for?

    Ok now the right answer... The rib-eye cut of steak is a BONELESS cut. When the bone is attached it is called a Rib Steak. The Rib-Eye is cut from the roast that sits at the top of the rib primal. The rib-eye roast refers to a beef rib roast that has had the 6th through the 12th rib bones removed leaving just the rib-eye muscle. Its doenst have a bone. It is named after the rib eye muscle.
