A lot of bettas prefer to eat when no one is watching. This could be what's going on. As well, they don't need much at all. Two or three pellets or the tiniest speckling of flakes, and quite often the betta will leave some behind. If he's showing any other signs of illness(clamped fins, loss of colour, sitting at the bottom of the tank, fungus, spots, bloat, dropsy, shredded fins, etc), please update so better advise can be offered.

Edit - Dallas should have pointed out that freeze dried bloodworms and brine shrimp are a health hazard, often causing fatal bloat and dropsy in all fish. If you decide to tempt with freeze dried foods, please presoak them before feeding to keep the food from absorbing water in the stomach and causing bloat.

Betta's require a specialized diet for carnivores and should consist of blood worms ,and brine shrimp(frozen is best) however they do pretty good on a pellet form of this called betta bites

try letting him fast for 1-2 days and feed him the pellets he will gobble them up

remember never feed your fish more than 2-3 pellets a feeding twice a day and skip at least one day a week for fasting (required for intestinal health)
