Has anyone made bread pudding with 'odd' bread ingredients?

I recently had some VERY stale (three months old) bakery cookies in my cabinet, that I didn't want to throw away, but they were too hard to eat (I only like soft cookies). I decided to try using them to make bread pudding. I used about 14-16 three inch cookies, 4 beaten eggs, 2 cups milk, and 3/4 cup brown sugar (with some ginger, cinnamon, and nutmeg). I let the custard mixture sit in the baking dish with the crumbled cookies for about 45 minutes, to allow the cookies to soften up before baking. It came out GREAT!

I've used all manner of breads, from hamburger/hotdog rolls, to stale biscuits and muffins, but this was my first experiment with cookies.

Has anyone else used 'odd' breads to make bread pudding? I'm thinking of making a savory version (no sugar) using cornbread, garlic bagels, or Texas toast.

    We used to have them made with stale sponges (you call it pound cake I believe)

    It may have been a twist on a trifle.

    When I was young, people used to save all the leftover sweet rolls, cake, cookies etc. and use them for toppings on desserts. Bread pudding..usually requires some type of bread, but they can be a mixture...not all one kind. Otherwise it is going to turn into a different dessert. But bagels, toast, french bread, etc. all should work fine.

    I just made a rice pudding which had 3/4 cup of cooked rice in it...with milk, eggs, etc. like a custard and it turned out great.

    Traditionally bakers would use the stale unsold bread to make bread pudding to do this the stale bread would be soaked in water and dried raisins/sultanas added together with sugar and mixed spice. This would be well mixed up then poured into a baking tray to about 1 inch thick then baked in the oven.

    Bread and butter pudding was also made with stale bread but an egg custard is used to soak the bread (the bread is sliced and buttered and layered with fruit).

    I only use wholemeal bread, and cheese on toast and bread and butter pudding are delicious. I could understand the TV versions years ago being made with white bread as that was the most used, but now more people are eating brown or wholemeal, it's time they caught up, or perhaps they think white looks better on TV.

    Donut bread pudding is super, but Cinnamon rolls with raisins bread pudding is even better.

    Italian Panettone is also great for making bread pudding. Also try using canned fruit cocktail instead of raisins.
