How do I cast off after two stitches instead of two?

I'm knitting a cat hat with holes for the ears. The pattern is asking to stitch 3 then cast off 10. The videos i've seen on youtube show how to cast off after two stitches instead of three. So do I still just cast off over the second or first stitch?

    You do as the pattern says.

    You knit 3 stitches.

    Then you cast off 10 stitches in the usual way by knitting the next 2 stitches and slipping the first of those stitches over the end of the right hand needle. Knit another stitch and slip another stitch over the tip of the right hand needle. Repeat until you have cast off 10 stitches.
