I've been searching for an instrumental version of this song for my wedding for ages now with no luck... all i can find is badly recorded covers on YouTube.
Anybody know where I can find it, or does anyone have it and be willing to share?!

Have you considered contacting Jose Gonzalez? He seems like cool enough of an artist to actually help you out. A lot of times indie artists give public radio stations instrumental versions of their songs they can play between segments. I bet NPR has access to one. It might be a stretch, but it's worth a shot. If all else fails, you might want to have someone play it live for you, I don't think it's a very difficult song to play. The only problem is that it's a cover of another band's song, so for this particular song, there might not be an instrumental version.
