how can I make Potato dumplings?
I want to make potato dumplings and the boxed mix that they sell in the store is just too expensive for my budget. Can I use instant mashed potatoes and mix it with egg and flour??

Allison, when I make Gnocchi, similar format, I use Yukon Gold, that have been sitting for a few days, if they are two fresh, the potato has to much moisture, I use all purpose flower, eggs, but give them a little bit of a mix. I also add a little olive oil. The dough has to be a firm dough not overly wet, I gently knead, roll my strips to make my gnocchi, in your case you form your dumplings.
A touch of salt won't go astray Allison.
