Know of any good recipes using olives?

I have a bunch of olives and don't know what to do with them. I put them on Pizza, but that is all I have thought of. Anybody know of any olive appetizers or other recipes that could help me use up my olives? I love trying anything new.

    1 1/2 lbs greens (any kind)

    2 1/8-inch strips lean salt pancetta, chopped (optional)

    1/4 cup extra virgin olive oil

    6-8 cloves garlic, minced

    1 shallot, minced

    1/4-1/2 tsp. hot red pepper flakes

    1 tsp. salt (or to taste)

    1/4 tsp. black pepper (or to taste)

    Any kind of greens may be used, including broccoli rabe, kale, Swiss chard, cabbage, spinach, or even sliced Napa cabbage or bok choy. Wash greens well and tear into bite sized pieces.

    In a hot skillet, saute pancetta in olive oil. Add garlic and shallot. Add the heavy stalks and or rib portions of greens to pan and cook them until tender.

    Next, add the leafy portions of the greens to the pan and cook only until a bright green color and the greens are slightly wilted. Season to taste and serve hot.

    Some like to add a dash of hot sauce or good quality wine vinegar.

    8 ounces imported black olives such as Kalamata

    4 garlic cloves, peeled and sliced

    1/2 lemon, scrubbed and thinly sliced

    1 teaspoon fennel seeds

    1/4 cup extra-virgin olive oil

    Pinch of crushed red pepper

    Preheat oven to 350 degrees. In a 8-inch baking pan, spread the olives, garlic slices, and lemon. Drizzle with the olive oil and sprinkle with the fennel seeds and red pepper.

    Bake for 45 minutes, stirring the olives at least 3 times. Remove from oven and store in the refrigerator.

    Makes 8 servings.

    1 cup finely chopped black olives

    2 cups mayonaise

    2 cups shredded cheese assortment

    6 english muffins

    Slice english muffins into halves.

    In a large bowl add mayonnaise, cheese, and black olives; stir.

    Spread ingredients on english muffin halves.

    Space out on a cookie sheet.

    Bake in oven at 350 degrees for 5 minutes or until they look delicious.

    Cut into squares and Enjoy!!!

    I loooove a good tuna nicoise salad. Tuna, boiled eggs, olives and cooked green beans with some cherry tomatoes and dressed salad leaves. Add anchovies too if you like. This is a great recipe: http://www.deliaonline.com/recipes/type-of-dish/sa... I don't usually bother with the fresh herbs though.

    I also like olives in a basic tomato pasta sauce with other veg - usually mushrooms and courgettes/zucchini. Just gently fry the veg with a little garlic, add a can of chopped tomatoes and stew for a bit, add a squirt of tomato paste and some basil and oregano, throw in the olives just long enough to heat through, and serve over spaghetti with some grated cheese.

    Or you could just marinate them in some oil with chilli and garlic and serve them as nibbles before dinner or for a snack with wine. Delish!

    A good appetizer or spread for bread is to combine chopped olives, a little of their juice into cream cheese, but that's for green olives.

    Black olives I put in all kinds of salads, tossed and pasta. If you like strong flavors you can make a black olive tapenade

    Ingredients

    1 cup pitted black olives, roughly chopped

    1 tablespoon capers, chopped

    1/2 teaspoon anchovy paste

    Juice of 1/2 of lemon

    1 clove garlic, minced

    1 1/2 teaspoons fresh thyme plus additional for garnish

    1 teaspoon dried oregano

    1/4 cup olive oil plus additional for brushing on bread

    2 packages goat cheese, softened

    1 baguette cut diagonally in 1/2-inch slices

    Preparation

    Combine olives, capers, anchovy paste, lemon juice, garlic, thyme, oregano, and 1/4 cup olive oil.

    Brush one side of bread with olive oil.

    In large sauté pan toast oiled side of bread over medium heat.

    Spread softened goat cheese on toasted side of bread; top with olive mixture and sprinkle with thyme leaves.

    a really good apetizer is crackers. put cream cheese on a ritz cracker and basil and tomatoes along with olives season it a bit and enjoy easy to make and it doesnt take long time

    I made this yesterday and use it for side dish or dips.

    1C sour cream or more

    1C sliced olives or more

    1C can corn drained (kernels)

    2C tiny,tiny black beans

    1/2C salsa(mild or hot)

    mix all together and place in bowl and put in frig. for about

    one hr. so every things marries together.
