I need a recipe for Oatmeal Cookies using Self-Rising Flour?
The recipes I find all use All-Purpose Flour, which I don't have, so a recipe using Self-Rising Flour would have to call for baking powder AND baking soda, so that I could actually use Self-Rising Flour as a substitute for All-Purpose Flour since Self-Rising Flour contains both baking powder and baking soda!

It's okay, you can use self-raising flour, omit the baking powder and sodas. Believe me, I have made several cakes, substituting self-raising flour for plain flour/all-purpose flour.

Self-rising flour contains salt and baking powder, no baking soda
You can use the recipe you like the best and simply omit the baking powder and half the salt

No matter what recipe you use for cookies, there is one ingredient I recommend that you use if you can get it. That is Mexican vanilla. My wife has been making cookies for many years. When others ask for her recipe and try to copy it, they are disappointed because they use regular vanilla. The Mexican vanilla has such a distinct flavor that it sets off all types of cakes, cookies, and candies. We made a special trip down to the border several years ago just to buy some. It is real extract, so is stronger than imitation. Also, you can buy it very inexpensively. Maybe you know someone who is going to take a trip somewhere in Texas, New Mexico, Arizona, or California. Maybe they would help you out. Good luck.
