2. I have never been a big person but I have been trying to maintain a steady weight. When I finally reached my goal weight on my iPhone app it said that I could increase my calorie intake. Wouldn't this make me gain weight? Please explain.

No clue about the PediaSure.
About the weight thing, a weight loss diets induces a caloric deficit, thus forcing the body to burn stored fat and convert it into energy. To maintain weight you need to consume more calories then you would during the diet phase, as you no longer require to maintain this deficit.
To gain weight you need to consume significantly more then your body needs, thus allowing your organism to store the excess energy as fat.
