what would be a good dough bait for catfish?

Best bait for catfish is going to be meat. Chicken Livers, Hot dogs, and it works especially well if its left out to sort of spoil. I dont think you will have much luck with bread. If you do try to use bread, use a weight, Catfish are bottom feeders, meat works so well because its heavy.

When I was younger I would take a container of pillsbury bread / buns , something like that. It is relatively inexpensive.

I would use the raw dough, & chicken livers to add scent. Make balls with a little liver in the center.
