The enzymes that hydrolyze proteins are not found in the mouth. The digestion of proteins begins in the stomach, where the enzyme pepsin breaks them down into smaller polypeptides. Protein digestion is completed in the small intestine, where polypeptides are digested into amino acids. The mouth contains the enzymes salivary amylase and salivary lipase, which begin the digestion of carbohydrates and fats, respectively. Salivary amylase digests starch and glycogen into disaccharides. Most chemical digestion, however, is completed in the small intestine.
