GTA 5 is quite obvious, it's rockstars flagship title! of course there will be a new one eventually.
Not sure about RDR sequel though, it was more or less a spin off of the gta series set in the wild west. It did sell well so it may be made into a separate franchise but this is just speculation.
And there is no information at all if these games are even being developed so no release dates are known since the games might not actually exist yet.

GTA 5 was recently confirmed,Set for sometime in late 2011 or 2012, They are currently working on location. As for Red Dead 3? They're still working on content for ReDemption, so it could be a while.
