How long should I defrost my wedding cake tier in the fridge? Can I refreeze it?

The top tier has been frozen for four months and we decided to eat a piece soon. I put it in the fridge yesterday to defrost. About how long until it's soft enough to cut? Can I refreeze the rest afterwards?

    I'm a retired baker & an exellent home cook ( I also freeze & can foods) who re-married five years ago....I did NOT freeze the top layer of my wedding cake....rarely do they taste like they did when you first served them...the vast majority end up with a nasty freezer taste & the texture suffers....especially if you do the traditional thing and wait until the first wedding anniversary... I bake/ice a small replica of our cake for each new anniversary, topped with our original cake topper.

    In the fridge depending on the cake, filling and frosting it can take 24-48 hours and no, the only thing that can be re-frozen is bread and even then, I would not re-freeze bread as you take the chance of ice crystal build up. Meat can be re-frozen IF first frozen raw, defrosted properly, cooked thoroughly first before re-freezing. Cake by it's nature is delicate, and many icings/fillings do not survive being frozen. The freezing process alters taste and texture.

    Now after four months the cake itself may be okay, but the icing/filling may not be. You may be okay if your wedding cake was fresh baked but many establishments ( all grocery store bakery depts do this) ship the cakes in pre-baked and already frozen ( they come in 1/4, 1/2, full sheet size & cupcakes, 8" rounds)...they thaw, assemble and decorate the cakes...no baking involved. If that is the type of cake yours was, re-freezing the cake may have already compromised it's taste...all I can say see what happens. But do NOT refreeze.

    BTW never freeze fresh veggies unless they are blanched first or when you do de-frost-cook them....yuck!

    Wedding cake that was designed to be frozen can really only freeze well for 3 months. It isn't going to be very good now.

    I would put it in the fridge to slowly defrost. Dont refreeze it. Throw it away after you eat a little after thawing it. It wont refreeze well at all.

    Common sense my friend. Depends on the size of the piece will determine how long it takes. I would give it 24 hours in the fridge, stick a toothpick in to see how the middle is.

    You probably have a few days to eat it once it has thawed as long as you keep it in the fridge. And NO I would not refreeze it.

    Freezing preserves food indefinitely in some cases, but the taste will always suffer. Dont expect your cake to taste amazing, but if it has been frozen properly it is safe to eat. However, refreezing it would not be safe and I don't recommend it.

    I wouldn't refreeze it. It may take up to 4-5 hours to defrost on the counter.

    Why did you take it out after 4 months? Traditionally you would do so at your 1st anniversary . . . and even then it will NOT be anything like what you remember you cake tasting like, but, it's tradition. Refreezing it will NOT improve it's quality or taste at this point.

    Never refreeze some thing you have defrosted.This is how people get food poisoning .
