Looking for a good potato salad recipe that does not have to be refrigerated?

Some friends are having an end of the summer pool party/cookout & everyone needs to bring some side items. I would love to make some potato salad, but I always make mine with mayo & that's not good in this hot weather. Does anyone have a good homemade potato salad recipe that can stand up to the heat?

    You're right in saying mayo is no good in the heat. Although potato salad recipes with mayo are really tasty it just doesn't last in warm weather and, if you can't refrigerate it, you might make yourself (or your friends) sick, so what I suggest is making a German-style potato salad.

    Rather than using mayo, the Germans use oil and vinegar. It gives the potatoes a very different texture (of course, you won't have the creaminess like mayo gives) but is also very tasty. Toss your cooked, cooled potatoes with extra-virgin olive oil and a dash of vinegar and taste. Then add more oil or more vinegar or more of both. Throw in a pinch of salt, a pinch of black pepper and perhaps some chopped fresh parsley or minced garlic or anything else you fancy.

    You can serve this German potato salad recipe with sausages, chicken or whatever else you like. I promise you'll like it! If you aren't keen on vinegar just use a tiny bit.

    my fav: Ingredients 3 tbsp. red wine vinegar 2 tsp. Dijon mustard 2 scallions, sliced 1 1/2 tsp. salt 1/4 tsp. pepper 3 tbsp. olive oil 1/4 cup chicken broth 4 carrots 1/4 lb. fresh green beans 2 lbs. new potatoes, unpeeled Directions Combine the vinegar, mustard, scallions, salt and pepper in a large bowl. Whisk in the olive oil, then the chicken broth. Peel the carrots and slice on the diagonal. Snap off the ends of the green beans and cut them on an angle into thirds. Bring a large pot of water to a boil, add the potatoes, and cook until tender, about 25 to 30 minutes (do not overcook). During the last 1 to 3 minutes, add the vegetables, then drain. Quarter or slice the potatoes and add them with the vegetables to the bowl of dressing. Toss and refrigerate for 1 hour or until ready to eat. Serves 4 to 6.

    You can make a German Potato Salad or a Roasted Potato Salad. Neither require mayo.

    I believe you can find a variety of these salads on foodnetwork.com and that way you can find the one you may like best.

    Instead of mayo, toss the cooked potatoes in with Light Italian dressing. It even tastes better the day after you make it
