Re: Fermented Orange Juice?

When pasturized orange juice, either in a carton after being opened or made from the concentrate in a can, is left in the fridge for a couple of weeks it ferments. Is this fermentation alcoholic? If not what are the fermentation products produced?.

    Orange juice can spontaneously ferment, particularly if left open, even in the fridge. This means that some sort of microorganism is in there eating the orange juice - it may not be your typical wine/beer fermentation and at this stage it probably is not fit for consumption. However, yes, there may be a sugar to alcohol conversion going on in there.

    You've probably never heard of orange wine, and that's because fermented orange juice tastes pretty foul.

    It may be moderately alcoholic but without a controlled yeast activity, it will be poor alcohol. If done right, you can create a product like Grand Marnier or Cointreau (of course creating something like this would also require distillation of the alcohol)
