Anyone have good bean recipes?

I'm looking for a good bean-based dinner recipe that isn't burritos, enchiladas, or soup (or chili). That's pretty much the extent of my cooking with beans so far. Preferably not requiring mashing the beans, but it doesn't really matter. I'm having a lot of trouble finding anything that really looks good.

Also, if anyone has a good hummus recipe, share that too! I like store-bought hummus, but have yet to find a homemade recipe that doesn't suck the butts.

    A quick suggestions: Baked Beans Pizza.

    In England, that is sold as a frozen pizza by Heinz even. They love baked beans over there! Baked beans and toast is normal food for everyone.

    Indian foods use a lot of beans: curried chickpeas, curried kidney beans, lentils with cream sauce. Eat it with rice or chappatis.

    Hummus is pretty easy to make, too.

    Prep Time: 10 minutes

    Total Time: 10 minutes

    Ingredients:

    1 16 oz can of chickpeas or garbanzo beans

    1/4 cup liquid from can of chickpeas

    3-5 tablespoons lemon juice (depending on taste)

    1 1/2 tablespoons tahini

    2 cloves garlic, crushed

    1/2 teaspoon salt

    2 tablespoons olive oil

    Preparation:

    Drain chickpeas and set aside liquid from can. Combine remaining ingredients in blender or food processor. Add 1/4 cup of liquid from chickpeas. Blend for 3-5 minutes on low until thoroughly mixed and smooth.

    Place in serving bowl, and create a shallow well in the center of the hummus.

    Add a small amount (1-2 tablespoons) of olive oil in the well. Garnish with parsley (optional).

    Serve immediately with fresh, warm or toasted pita bread, or cover and refrigerate.

    Variations

    For a spicier hummus, add a sliced red chile or a dash of cayenne pepper.

    Storing Hummus

    Hummus can be refrigerated for up to 3 days and can be kept in the freezer for up to one month. Add a little olive oil if it appears to be too dry.

    The Aztec Salad on the Physicians Committee for Responsible Medicine is really delicious, quick and easy. I've made it several times and taken it to a pot luck where everyone, even omnis loved it. It calls for black beans, corn, red onion, olives, cilantro, tomatoes, lemon juice, cumin.....

    I use this bean filling for tacos, taco rings and nachos:

    Bean filling:

    - 1 can of Old El Paso Refried Beans

    - 1 can of black beans

    - diced tomatoes- Optional

    - Seasonings

    Heat a pan to medium heat and add to it the can of refried beans. Warm the beans and mix them around.

    Add the can of black beans, drained. Reduce the heat to medium-low. Mix the beans in with the refried beans.

    Season with salt, pepper, and taco seasonings. Stir the mixture.

    Next add diced tomatoes and mix them in fully as well.

    I put it in tacos with lettuce, cheese and sour cream.

    I put it in scoops tortilla chips on a plate with cheese and then microwave it until the cheese melts. Then top with sour cream, guacamole, etc.

    I also love Black bean and mango salsa!

    Ingredients

    Black Bean Mango Salsa:

    1 cup cooked or canned black beans, drained

    1 medium mango, peeled and coarsely chopped (about 1 cup)

    1/2 cup finely chopped red onion

    1 jalapeno, stemmed, seeded and finely diced

    1/2 cup coarsely chopped cilantro

    1/2 cup fresh lime juice

    1/4 cup olive oil

    Salt and freshly ground white pepper

    Directions

    Combine first 7 ingredients in a large bowl. Season to taste with salt & white pepper. May be prepared and refrigerated, covered, up to 1 day ahead. Bring to room temperature 1 hour before serving.

    Falafel is delicious too!

    I make hommus all the time, using this recipe http://www.taste.com.au/recipes/5103/hummus, but I add more lemon juice than they say. I have trouble eating store bought hommus now, it's too bland.
