every recipe for tinga (Mexican) doesn't sound right?

i would have imagined that it would be slow cooked to have the "shredded" appearance but every recipe i saw didnt sound right to me. Help me out, its my favorite but unfortunately i have never cooked it myself.

    The way I do mine is I boil the chicken breast until tender. Take it out and et it cool a bit. In a saute pan, I sweat down some sliced onion- meanwhile, you can start shredding the chicken. Add shredded chicken to onions and combine with 1 can of Chipotle peppers in Adobo sauce or 1 can of chipotle salsa. Combine and heat for a few minutes. Serve on top of tostadas with crema fresca or sour cream and chopped tomato and cilantro. Or, you can also make tacos or burritos with it if you like. Hope this helps.
