    because yeasts/bacteria convert the sugars and alcohols into acid, which is a chemical process.

    Because it is. The chemicals that you start with are not the same chemicals that you finish with - they have changed.You start with sugar and water and you finish with carbon dioxide and alcohol. That seems like a change to me.
