I want folks opinions on spiced vs unspiced apple butter.....?

I know I have had apple butter in the past that was not spiced, but I have never made it myself and can't find a single recipe that doesn't call for spices. Has anyone had un-spiced apple butter? Apple butter that just has minimal sugar added so it caramelizes nicely as it cooks down?

Update:

Thanks Penny, I know its only going to affect the flavor.......I may cook it for awhile then split it and do half spice, half unspiced and then let my family decide which they prefer....

I have only eaten apple butter with spices, usually cinnamon, cloves and allspice. The added spices will not effect the texture or caramelization of the recipe if you wish to leave them out. The texture of the apple butter is caused by the reduction of the applesauce or apples depending on how you make it. Reducing the sugar probably won't change the texture of the final product much either.
