In baked brie can I use cranberries instead of craisins?

Update:

Can I cook them with sugar or something ahead of time? Any other ideas besides pecans and cranberries to toss in with my brie in the crockpot?

You can, but it is not recommended. Cranberries are extremely tart, while craisins are sweetened. Secondly, under heat, uncooked cranberries will pop and mix in with the cheese. Instead of cranberries dotting the item, you'll end up with bitter, cranberry flavored cheese, and it could even come out pink in color.

There are no recipes I know of that use raw, unsweetened cranberries as an ingredient (and I have been cooking for a long time), They are always either boiled with sugar, juiced, dried with sugar, or used simply as a garnish. Raw juice is used as a flavoring extract in small doses, or mixed with sugar and water to make cranberry juice.

If you were to bite into a raw cranberry, the taste would be overpowering- you'd probably spit it out. It is more bitter than a straight shot of hard liquor.

Source(s): edit: You can sweeten and dry the cranberries at home, if you have a little extra time: Pick out the best cranberries. Bring to a boil 2 or 3 cups of water and about 1/2 cup of powdered sugar. Turn heat down to medium. Add the berries and let sit until JUST popped. Then strain the popped cranberries, cool 20 mins, and arrange on a cookie sheet covered in parchment paper. Bake low at 150-200 degrees for 8 hours till fully dehydrated like raisins. If that is too much, you could make a cranberry sauce to pour over the brie once its thru cooking. Cranberry sauce is the easiest thing to make: One bag of cranberries, 1 cup water and one cup sugar. Bring everything to a boil, simmer for 20 minutes, then cool in the fridge. Otherwise, there is no way to add raw cranberries without destroying the integrity of the cheese. Good luck, I'm sure whatever you do will come out delicious:)

You won't get the same result because cranberries are a bit sour, where craisins are sweet.

I don't think so, it would turn out sort of mushy because cranberries are wet, also cranberries are very sour, but you might want to give it a try and see.
