Keeping baked good fresh?
A friend just started a restaurant and would like me to bake some desserts for him. I know how to bake well but I dont know how to make it last and to taste just as fresh a few days later. If I have a cake or cupcakes how do I keep the frosting good and the cupcakes moist? Doesnt the fridge dry the cake out if you put it in there? How do bakeries keep things overnight without them tasting old?

You can store them in the fridge and ice each day.
By law, if food is to be sold, it has to be made daily,
Bakeries either sell cheap the following day clearly marked, or are ditched.
You don't want your friend getting prosecuted.

Hey how are you
It is quit good that you want to help your friend and some restaurants people just go for the deserts alone. So you must have great tasting products to serve to customers. My questions is why can't you bake fresh and deliver to your friend on the same day?
If this is not do- able here are some suggestions you may have to do further research to see if it works for you.
Try putting it in a plastic bag with a packet or two of desiccant in your baked breads, bagles, danishes etc.
As for cookies and brownies your best bet, in my humble opinion, is to make your cookies and brownies chewy - that is, not baked until they are dry and will break easily. The cookies are a more difficult matter. Again, if it says to cook them 15 minutes, you might want to take them out around 10-12 minutes. Let them cool and then wrap each one in plastic wrap - then put them in a Ziplock bag in a single layer or with wax paper crumpled up between the layers.
Use the oven to revive crackers and cereals gone soft. Put the contents of the boxes on a cookie sheet or large pan and place them in a 350 degree oven. In about 8 minutes, you'll be able to hear the crunch again.

Add an apple half to your containers of cookies or bread--and even cake--to keep it fresh. The moisture in the apple will add moisture to the baked goods, keeping them nice and soft much longer.

Freeze cakes and bread with a piece of towel, and that will draw the moisture away from your goodies. Don't use paper--only cloth will do. It doesn't have to be wrapped around the whole thing. Make it a big enough piece to cover half of the top of the item. Your baked treats will come out springy soft.

Save dry, hard bread. You can make bread crumbs or croutons, but that isn't your only choice. Here's a simple solution. Spray each roll lightly with water, and put in the oven for 10 minutes. Presto! You have soft and warm rolls that will taste fresh.

Put dry or crumbling cookies on a cookie sheet, and dampen a thin dish towel. Wring it out really well, and lay it over the cookies. Put them in a 350 degree oven for five minutes.

baking fresh is one key. when you're ready to give it to him, bake 1 hour ahead. You can prepare the batter and keep it in containers and label it so that when you're ready, you can bake it but the batter i'd say is good for 3 days. When you bake it, you must cover it so that no air will touch the baked good (saran wrap, cover on cake pans are being sold now) and make sure its covered tightly.
As for the frosting, you can make it ahead of time (1 hour or a few days) and make sure its room temp. Also, the cake must be cooled down before frosting or else it will melt. You can speed this up by sticking it in the fridge. Baked goods stay fresh for a few days and then becomes stale, even if it covered and sticking it in the fridge for a few days reduces the moisture even MORE!
