If I were to use a super-telephoto lens at a football game, would manual focus be hard to work with?

I am no pro. More of a photography enthusiast. Using Nikon D7000.

    Ummmmm.......how super? It depends how good you are at anticipating action within the game and how well you get to know your focus ring. If you are exceptional at both then it can be doable this could take years of honing to master though.

    Yes. current focus screens don't do manual focus as easy as the old split prism ones did. So manual focus takes just a bit more effort. Manual focussing a rapidly moving target takes even more practice.

    d7000 is a good camera. if you match it with a good lens that has a auto and manual switch that's easy to reach you should have no problems.
