I do not know if this will work on the fishy taste in birds, but to help remove the gamey taste in Deer I have found that the use of certain herbs work at drawing the taste out of the venison.

What you may want to do is to boil the meat in water containing Bay Leaf (remove the leaves before serving) and rosemary.

Then if it has worked the meat will be ready to be cut up and used in a hearty stew.

Like I said, that works well for deer and I don't know if it'll work with cranes, but it is worth a shot.

Since they eat fish as the main part of their diet, I would expect them to taste like fish.
