Would this be healthy?
If I just ate salad, salad dressing, croutons, veggies, fruits, and rice would that be considered healthy?

Depends on the salad dressing, if it is very oily or fatty and what types of oils are used in it. Canola and olive oil are probably the best for salad dressing. The rest is healthy. If it is white rice it should contain more starch than brown rice which is rich in fibre and a good source of carbs.

It depends, you need to be more specific: is it one time meal or is it your example of diet for long time? If it's a one meal- sounds healthy; if this is all you plan to eat for prolonged period of time- doesn't seem too good, you need calcium, protein, b12 and other components that are not found in salad and rice.and dressing is better if it's olive oil-very healthy dressing.
