What Should We Cook For Dinner For My Aunt?
My mom and I need some ideas on what to cook. When she normally comes over we either have fried or baked chicken or fried fish with yellow rice and a salad. Any new ideas of what we can make?
THINGS YOU SHOULD KNOW:
*She loves pork
*She is not too big on pasta dishes
*It should be something that can be made within two hours
*It should be on the cheaper side, nothing over 30 bucks for all of the items needed to make the dish
*I would love it if you would add in side dishes

THE MEAT: Pork loin.
If it's small, pop it in a pan in the oven at 400* for 45 minutes after rolling it in olive oil & seasonings. I recommend rosemary, marjoram, oregano, basil, thyme, salt, & white pepper.
If it's really big, sear it in a pan until it's browned, then pop it in for the same amount of time.
Optional: Cut it until it's one big flat piece of meat. Cover it with feta cheese, dried apricots, & fresh spinach, then roll it up like a Swiss Roll Cake.
THE SAUCE:
Make a rue; melt butter in a pot, then toss in 1/4 cup of flour, then a can or chicken or beef broth. Add the spices you put on the pork & any pork juice.
THE STARCH: Roast potatoes.
Russets are okay, red & yellow are better, Fingerling are the best.
Chip them to bits, rinse them in water, cover them with the same seasonings plus paprika. Give them a coat of peanut or olive oil. Put them in 30 minutes before the pork & they will be done at the same time.
THE VEGETABLE: Almond green bean, sweet squash, or succotash.
A: Boil fresh green beans with bay leaf, garlic, & bacon. Add butter & sliced almonds when they're done.
B: Get acorn or spaghetti squash, halve them, scoop out the seeds, coat in cloves, cinnamon, mace, or allspice, put honey or brown sugar in them, & butter. Put them in a large casserole dish with a cup of water & cover with foil. They go in the same time as the potatoes.
C: Canned corn cooked in butter & sugar mixed with boiled lima beans. Add more butter, salt, & parsley.

This time of year apples are in season and pork goes very well with apples.
Check the newspaper for the grocery store that has pork on sale and buy whatever cut they have and either roast it in the oven or pan fry it on top of the stove.
I can picture candied sweet potatoes with it and a boiled green vegetable like green beans or a green leafy vegetable like cabbage.
The apples can be baked in the oven peeled, chopped or sliced and tossed with brown and white sugar and sprinkled with cinnamon and nutmeg and a little orange juice plus a tablespoon of flour to help thicken the juices as it bakes in a buttered baking dish for about 45 minutes at 350 degrees..
or if you have some canned peaches or pineapple chunks you can heat them in a pan and add butter and cinnamon and serve this over vanilla ice cream with a couple cookies added for dessert
That pork you cook can be on the spicy side with red pepper or seasoned with rosemary, garlic, lemon salt and pepper.

pork
sweet potatoes
cabbage or green beans
peaches or pineapple chunks canned
cookies
vanilla ice cream
bread or make your own cornbread or biscuits

Breaded or Stuffed Pork Chops, roasted baby potatoes w/parsley and mixed vegetables, a crusty roll and since it's fall apple crisp for dessert.

pork loin is juicy and cooks quickly. serve with fresh asparagus or fresh green beans (drizzle with olive oil and roast with the meat. yellow, wild or dirty rice and a fruit compote. my favorite is fresh plus dried cranberries cooked with candied ginger and orange zest. simmer with cinnamon, black pepper, vanilla bean and the juice of the oranges you zested
