how to pronounce 'beer'?
Is the 'ee' pronounced /ɪə/ (i-uh) ɪ like in 'lip' , or is it /i/ like in leap?
Why in pronunciation sites it says /ɪə/ then like in here: http://dictionary.reference.com/browse/beer

It's because it's hard to put English pronunciation into phonetic symbols.
ɪə: The ɪ is for the "ee" sound, the ə is from the sound between the second e and the r from Germanic languages.
bɪər = The English word "beer" is taken from the pronunciation of the word from Dutch spelled "bier".

"Bee" as in the insect and than "ear" as the appendage for hearing. Bee-ear and said quickly. Bee/ear=beer.
