I'm thinking of spending six weeks at a immersion Spanish school in Guatemala. I will live with a host family while I'm there. Currently I would describe my Spanish as intermediate. I'm applying for a job which prefers bilingual applicants. Will six weeks of immersion Spanish get me to that point?
This position is business. I would be presenting to groups of clients, some of whom may not understand English well. I don't need to be fluent but I need to come across professionally.

Depending on your degree of motivation and dedication, that could be enough to get you at least semi-fluent. Right now you are still translating everything, as you so rightly point out. You will need to make the mental shift into listening and speaking directly without using your English as a crutch (that is, switching from your left brain into your right brain).
It also depends on the level and type of Spanish needed for the job you want to apply for. Academic? Business? Financial? Hospitality industry? etc. Since you say "prefers", there is a good chance you could get hired as potentially bilingual so long as your other qualifications meet the job requirements. You will need to keep practicing after the six weeks are over, though.
