You can make squares any way you like. The simplest answer is just to go back and forth until it's long enough. You could make them with mitred corners. They don't even have to be square. You can make rectangles like Warm Up America or triangles or hexagons.
There are tutorials on granny squares because people use them to teach crochet. You won't find tutorials for everything you might want to make (or for most things you might want to make). You don't need them. Once you know the basic stitches and how to read a pattern, all you need is a pattern. And here are some of those:

I think you'll have a hard time finding a video tutorial for an afghan square. Videos are for the most part, of how to do individual stitches. It's up to you to put them together.

Well, I bought this book called Beyond the Square: Crochet Motifs. It does have the typical squares but also quite a few other shapes as well. I recommend you pick up a copy, it was really helpful.
