A good recipe for quinoa?

Does anyone have a good recipe using the grain quinoa. It is supposed to be very healthy for you but is bland. If you have used, how do you use it.

    I cook it with broth instead of water, and then I "fry" it with a tiny bit of oil & whatever spices will go with my meal. Sometimes I put the spices in the rice cooker with the broth & it is always delicious. It is also great to add chickpeas to it. On allrecipes.com there are many quinoa recipes. My personal favorite is curried quinoa.

    2 tablespoons olive oil, or as needed

    1 small onion, diced

    2 cloves garlic, minced

    1 cup quinoa

    2 cups chicken broth

    1 tablespoon curry powder, or to taste

    1 tablespoon ancho chile powder

    salt and pepper to taste

    Directions

    Heat oil in a large skillet over medium heat. Add onion and garlic and cook and stir for 2 minutes; add quinoa and cook and stir until lightly toasted, about 5 minutes.

    Pour broth into the pan and bring to a boil. Reduce heat and add curry and chile powders; cover and simmer until tender, about 25 minutes. Season to taste with salt and pepper.

    Cook per package instructions. Then add some red wine vinegar, fresh chopped tomatoes, olive oil, fresh garlic (only a little), fresh parsley, oregano, salt and pepper. I like to add some red pepper flakes too. Also add some lime or lemon. I know these may sound weird but add then when the quinoa is still warm then let cool and pop in the fridge. It will only get better with time :)

    Try looking up recipes for quinoa and black beans, quinoa stuffed peppers, quinoa salads, breakfast quinoa... etc
