Cranberry Relish Recipe?

I had a wonderful Cranberry Relish a few years ago that had....Cranberries of course, walnuts, apples and pineapple and orange zest, it was very good.

I have been looking all day on the computer for a recipe like this but can not find one, though there are alot of recipes that look really good, there is none that has all these componets to them.

Does anyone know of a cranberry relish recipe with the above mentioned ingredents in them.

    Cranberry Relish Recipe

    Preparation time: 15 minutes.

    Ingredients

    2 cups washed raw cranberries

    2 skinned and cored tart apples

    1 large, whole (peel ON) seedless orange, cut into sections

    1 to 2 cups granulated sugar (depending on how sweet you would like your relish to be)

    Method

    1 Set up the grinder with a medium-sized blade on the edge of a table with a large roasting pan or bowl to catch the mix as it grinds. These old fashioned grinders tend to leak some of the juice down the grinder base, so you may want to set up an additional pan on the floor under the grinder to catch the drips. If you don't have an old-fashioned grinder you can use a grinder attachment on a KitchenAid mixer, you can chop by hand (though that will take a lot of work), or you can chop in a food processor (be very careful not to over-pulse, or you'll end up with mush).

    2 Run fruit through a grinder. Use the entire (seedless) orange, peels, pith and all.

    3 Mix in the sugar. Let sit at room temperature until sugar dissolves, about 45 minutes. Store in the refrigerator.Makes about 3 cups.

    Apple Cranberry Relish."This relish has a great flavor especially with the addition of celery! Chopped pecans or walnuts can be added if desired."

    Ingredients

    2 navel oranges

    2 (12 ounce) packages cranberries

    2 apples - peeled, cored and chopped

    2 celery, chopped

    3 cups white sugar

    Directions

    Grate peel of orange; reserve. Peel oranges and discard white membranes. Separate oranges into sections and place half in a food processor or blender. To the food processor add half of the cranberries, apples and celery. Process until coarsely chopped. Transfer to a bowl; repeat with remaining oranges, cranberries, apples and celery. Stir in sugar and reserved orange peel. Cover and refrigerate overnight.

    Cranberry Relish

    12 ounces fresh cranberries

    1 organic navel orange, scrubbed and cut into 8 pieces

    2 apples, peeled and cut into 8 pieces

    1/4 to 1 cup natural sugar

    1/3 cup chopped pecans

    Wash the cranberries and remove any stems, bad cranberries, or inedible stuff you find. Put half of the cranberries, orange (unpeeled), and apple into the food processor and pulse to chop coarsely. Some larger pieces are okay, but nothing big enough to choke on. Pour into a bowl and process the other half of the fruit. Put it into a bowl, add the sugar to taste, and mix in the pecans. Refrigerate it for a day or two to allow the flavors to develop. Quick! If you start now, it’ll be ready by Thanksgiving.

    Serves 6-8

    1 (12) ounce bag fresh cranberries

    1 1/2 cups peeled and chopped apple

    1 cup sugar

    1 cup water

    a couple of pinches of salt

    1 1/2 cup chopped fresh pineapple

    the zest of 1 medium orange

    2/3 cups coarsely chopped walnuts

    1/4 teaspoon almond extract

    Combine first six ingredients in a medium sauce pan; bring to a boil. Reduce heat, and simmer for about 10 minutes, stirring occasionally, until the cranberries pop and the sauce has thickened.

    Remove from heat. Stir in orange zest, walnuts, and almond extract. Cool; place in an air-tight container and chill before serving.
