The state they live is in a different universe than ours and is entirely fictional. In "The Simpsons Movie" it is revealed that the four states that border Springfield are Ohio, Nevada, Maine, and Kentucky.
My best guess is that they live in Illinois due to an envelope which almost reads Springfield, IL in the episode "Blood Feud"
