Anyone have a good recipe using quinoa?

I have a bag of quinoa lying around. I know how to make it, but I'm not sure how to "spice it up." Anyone have any recipes?

    This is a salad I made for Christmas - delicious! The recipe makes a large quantity (says it serves 4 to which I'd add "as a main meal").

    Turtle (Black) Bean, Quinoa and Cumin Salad with Cherry Tomatoes

    250g black beans, 1 cup white quinoa, rinsed, 4 tbsp olive oil, 1 tsp cumin seeds, 1 1/2 punnets cherry tomatoes, halved, 2 shallots, thinly sliced, 2 tbsp white wine vinegar, 1/4 tsp cayenne pepper, 1/4 tsp ground black pepper, 1 tsp salt, 1/2 bunch coriander

    Soak beans in cold water for 4 hours or overnight. Cook in fresh water until tender (90 mins). Cook quinoa and set aside to cool slightly. Heat 2 tbsp oil in a pan over medium heat and fry 4 tbsp of the cooked quinoa, tossing for 10 mins or until crisp and golden. Drain on kitchen paper. In a dry pan, toast cumin seeds 30 seconds or until fragrant. In a large bowl, place tomatoes, shallots, remaining olive oil, vinegar, cayenne, black pepper, salt, toasted cumin and coriander and combine. Add boiled quinoa and beans and mix well. Sprinkle with fried quinoa and garnish with extra coriander.

    Quinoa makes good cold salads, like with avocado and tomato. Sorry I don't have any recipes at hand - most of my cooking is off the cuff and I never write anything down.

    But yeah, cold salads. (Cook the quinoa first, of course)

    I substituted quinoa in fried rice and it was delicious. I love the way it pops between the teeth!

    I also like to use it as a filler in my tofu-loaf and veggie burgers. Gives them a neat texture and good stability.
