Does cooking in a crock pot rob food of vitamins and nutrients?
I'd like to explore crock pot cooking for the great long, slow cooking flavor but do you get the vitamins out of the vegetables and the full benefits of the protein cooked?

Not at all. Because the food is cooked at a much lower temperature, there is less damage to the nutrients. Also, because you typically use less water, much is reabsorbed into the food, rather than being thrown out. Best of all, its easy. I use my slow cooker even when I'm home all day but if I need to run out for something, I just make sure its on low and when I come home, the house smells wonderful.

I've never used a crock pot. We have an electric pressure that cooks the same foods only a day sooner.LOL We do have a 5 gallon crock for making kraut.
