Is cholesterol found in meat or the fat in meat?
Meats such as beef and pork are known to elevate ones cholesterol. Is cholesterol found in the meat portion or the fatty portion of the meat? How about game meat such as elk or buffalo. Butchers say they are very lean and often have to add fat to the ground meat or sausages they make. Are those meats also known to be high in cholesterol?

are you talking about fats of cholesterol? Cholesterol is a steroid that if accumulated in your blood stream can cause different deseases. there are 2 types of fats: saturated an unsaturated fats. One contribute to adding cholesterol in your blood stream and the other can help remove it. Fish usually have more unsaturated fats, and red meat has more saturated fats :)

Fat will be intertwined in the meat (known as visceral fat) and also around the meat (known as adipose tissue). When it comes to lean cuts, there will always be fats in the meat, especially red and dark meats, whereas lighter meats will have less fats in them.
Cholesterol can be elevated in may ways. Stress, being obese, being overly sedentary, smoking and all round poor nutritional standards ALL elevate cholesterol levels in the cardiovascular system, which can lead to hear issues.
Dietary cholesterol will be raised by eating a diet high in LDL cholesterol containing foods, trans/hydrogenated and saturated fats all contain high LDL (low density lipo-proteins), as do heavily processed foods like fast foods and confectionery items.
Just as cholesterol is raised, it can be lowered with fats! Eating HDL (high density lipo-protien) cholesterol containing foods, natural fats that are liquid like flax oil, fish oil, olive oil and fats contained in nuts, seeds, fruits, fish and dairy products (even full fat ones) all help reduce the amount of LDL cholesterol. These fats also contain Omega 3, 6 and 9 fatty acids which break dwon LDL cholesterol. A diet high in fiber does the same. And as in the paragraph above lifestyle changes also aid in lowering cholesterol, so stopping smoking, taking time out to relax, being active and improving ones diet all help lower the risks of damage done to the cardiovascular system.
I have never heard of Butchers having to add fat to sausages, ever. But the fats in meats, although classed as saturates are still good for you as they contain many minerals and the vitamins A, D, E and K. If eaten in moderation accompanied by an active lifestyle there should be no cause for concern.
