How long does cheese stay fresh?
Last Saturday, I opened sour cream, Parmesan cheese, and Mascarpone cheese to add to my mashed potato's. How long are they good for. Are they still good to use today? It is a week today that they were opened. I had food poisoning from cheese at a restaurant once and never use anything 3/4 days after opening it but the Mascarpone was 8 dollars and don't want to waste it. Thanks in advance for your answers. :)

Cheese is aged for months on end before it's sold. Hard cheese is good even after it has mold on it. You simply cut the mold off. If you had food poisoning from cheese it wasn't the cheese itself but how it was stored and handled. Any food can pick up bacteria if it is not handled right. If yours was wrapped and stored right and not cut on a contaminated board it is fine to use.
Parmesan is a hard cheese and therefore good for a long time kept covered in your fridge. Mascapone being a cream cheese should be used soon--today is good
