Can I shallow fry instead of deep fry?
I have some spring rolls which I'm meant to deep fry but I no longer have a deep fryer. Is there any way I could adjust the times or something and shallow fry them instead?

You can bake them as well. Spritz with a little oil and bake in a hot oven.
But to answer your question..
Yes you can put a bit of oil in a pan and fry them, if you put an inch or so of oil you will essentially be deep frying. (the oil would come up about half way up the spring roll.)
By putting just a bit of oil in the pan the cooking process may take a bit longer and you may not get the overall golden color that you would get if you used a lot more oil.

Just deep fry stovetop in a small sauce pan instead. Put just enough oil in the pan to submerge the spring roll. The oil should be a few inches below the top for safety reasons.

have you got a fat/candy thermometer? get another one if you had one. they are inexpensive.
deepish sauce pan, a quarter full of oil, heat to 350F on the thermometer and fry those thingys. Then you can strain the oil back into the bottle when it cools and stash it in the fridge.
Sauce pans or deep cast iron skillets work great for frying stuff. Isn't really too deep so can't put too much in it, but it works great.

It is better to bake, but you you can shallow fry in just a little oil on about med-high for about 5 minutes each side.
