Freezing pumpkin nut bread?

I am new to bread baking and intended to bake pumpkin nut bread for Christmas but didn’t get around to it. I still have the taste for it so I decided to go ahead and get it out of my system this week.

As long as I’m in there, I decided to make 4 loaves or so and would like to freeze the extra. How long can I reasonably expect it to last in the freezer? If the quality is going to go way downhill quickly, then I’ll just give the extra away up front.

    For quick bread loaves like this, wrap each loaf tightly in 2 layers of clingwrap/Saran wrap, then place 2 loaves inside a large freezer ziplock bag. Seal the bag most of the way, and use a straw to suck out as much air as possible, then seal the bag completely. This is cheaper than that FoodSaver vacuum sealer...and it works about as well too.

    Date and label the bag and toss it in the freezer. So long as the freezer doesn't lose power, the loaves will be fine for at least a year.

    We threw some pound cake loaves into our freezer using this method and forgot about them. 3 years later we came across them again while cleaning out the freezer. Out of curiosity, we thawed one and to our surprise it was still moist and tasty.

    Source(s): This method works for extra cuts of meat as well. Remember, exposure to the air is the bane of frozen food. Keeping air out means you can store food longer. A lot longer.
