Can I be hired in a bar in Italy without being a citizen?

It's for research for a book - even if there's a small possibility of a bar hiring someone under the table, I'd like to know about it.

    well i haven't been to Italy yet but while visiting Spain i met many foreigners who worked under the table for bars/clubs. most of them didn't even work at the bar/club, but would go around promoting the club and trying to lead groups of people to their establishment. i would assume Italy wouldn't be much different

    Ciao, I am italian and you don't need to be a citizen to be hired in a bar, you just need to have the residency permission or whatever it's called in english :D :D

    If you're an EU national that speaks good Italian and has the necessary training, yes. Otherwise you could be a prostitute?
