Help! Anyone have an easy appetizer recipe for tonight?

I am going to a dance tonight and need to take an appetizer or finger food. Someone else is bringing chips and some sort of guacamole dip. Any ideas that are tasty, easy to make, and can be left out for a few hours. I can't keep it warm, so it needs to be good cold. Thanks!

You could make a tray with cheese sausage and crackers-a veggie tray with ranch dip{put the dip in a small bowl and nest it in a sllightly larger bowl with ice in it}-place a brick of cream cheese in a shallow soup bowl cover with salsa and set a variety of crackers with it-spread softened cream cheese on a plate top with cocktail sauce and cooked salad style shrimp served with crackers-mix rach dip mix in with a brick of softened cream cheese and spread on flour tortillas top with ham or turkey lunch meat and roll up slice into 1/2 inch coins and secure with toothpicks-celery with peanut butter and cream cheese spread on-fruit and cheese kabob sticks-pretzles with cheese dip

    Texas Caviar

    3/4 cup apple cider vinegar

    1 cup olive oil

    1 t salt

    1 t, black pepper

    1 cup sugar

    1 can pinto beans

    1 can black beans

1 can navy beans or black eyed peas

    1 can of white corn

    (drain and rinse canned products)

You can substitute any of the beans for a bean you prefer

    chop

    1 cup celery

    1 small onion

    1 cup green onions

    1 small jar of pimentos

1/2 cup green, red, or yellow pepper

Mix together and let it marinate. This will last for a week in the fridge and it tastes better as it sits.

    Serve with corn scoops.

You can add things to make it your own, this makes quite a bit, its cheap, and yummy! (its been a hit whenever I bring it to a gathering.)

    Drain before serving.

Grab some jars of salsa (different kinds) and some nacho chips and you'll be good to go. Take a nice bowl or two to put the salsa in for serving.

a veggie platter with a ranch dressing in a bottle. So you can just pour it out when needed.
